- <p>Any kind of sasusage, green vegetables, and beans will probably work in this recipe. Probably more too. We use andouille, kale, and black beans.</p>

- <h2>Ingredients</h2>
- <ul>
- <li>14 oz andoulle sausage (sliced and halved/quarted)</li>
- <li>2 shallots (thinly sliced)</li>
- <li>3 cloves of garlic (minced)</li>
- <li>2 tbs oil</li>
- <li>1/2 tsp oregano (dried)</li>
- <li>1/4 tsp chili flakes (dried)</li>
- <li>14 oz black beans (canned)</li>
- <li>1 bunch kale (chopped)</li>
- <li>16 oz chicken stock</li>
- <li>black pepper (ground)</li>
- <li>salt</li>

- <h2>Instructions</h2>
- <ol>
- <li>Heat a pan over medium high heat, add oil until shimmering.</li>
- <li>Add sausage and cook until completely browned. (~6 min)</li>
- <li>Add shallot, garlic, oregano, and chili flakes, cook and stir for 1 min.</li>
- <li>Add chicken stock and scrape any brown bits from the bottom of the pan.</li>
- <li>Add beans and greens, season with a pinch of salt and pepper.</li>
- <li>Cover pan and lower heat to medium low, and cook until greens wilt. (~5 min)</li>
- <li>Adjust seasoning to taste, and serve.</li>
