Tomato Basil Bisque
Ingredients
- 1 tbs oil
- 6 cloves garlic (minced)
- 4 x 14.5 oz diced tomatoes
- 2 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper (ground)
- 1 cup heavy cream
- 6 basil leaves
Instructions
- In a large steel soup pot, heat oil and garlic over medium-low heat, until garlic starts to brown. (~4 min)
- Add the broth and tomatoes.
- Increase heat to medium, and bring to a gentle boil.
- Reduce heat to low.
- Add salt and black pepper.
- Slowly pour in cream while stirring.
- Add basal and stir.
- Blend, then serve.
