Sausage Greens and Beans

Any kind of sasusage, green vegetables, and beans will probably work in this recipe. Probably more too. We use andouille, kale, and black beans.

Ingredients

  • 14 oz andoulle sausage (sliced and halved/quarted)
  • 2 shallots (thinly sliced)
  • 3 cloves of garlic (minced)
  • 2 tbs oil
  • 1/2 tsp oregano (dried)
  • 1/4 tsp chili flakes (dried)
  • 14 oz black beans (canned)
  • 1 bunch kale (chopped)
  • 16 oz chicken stock
  • black pepper (ground)
  • salt

Instructions

  1. Heat a pan over medium high heat, add oil until shimmering.
  2. Add sausage and cook until completely browned. (~6 min)
  3. Add shallot, garlic, oregano, and chili flakes, cook and stir for 1 min.
  4. Add chicken stock and scrape any brown bits from the bottom of the pan.
  5. Add beans and greens, season with a pinch of salt and pepper.
  6. Cover pan and lower heat to medium low, and cook until greens wilt. (~5 min)
  7. Adjust seasoning to taste, and serve.
