Sausage Greens and Beans
Any kind of sasusage, green vegetables, and beans will probably work in this recipe. Probably more too. We use andouille, kale, and black beans.
Ingredients
- 14 oz andoulle sausage (sliced and halved/quarted)
- 2 shallots (thinly sliced)
- 3 cloves of garlic (minced)
- 1 red onion (halved and sliced)
- 2 tbs oil
- 1/2 tsp oregano (dried)
- 1/4 tsp chili flakes (dried)
- 14 oz black beans (canned)
- 1 bunch kale (chopped)
- 16 oz chicken stock
- black pepper (ground)
- salt
Instructions
- Heat a pan over medium high heat, add oil until shimmering.
- Add sausage and cook until completely browned. (~6 min)
- Add shallot, garlic, oregano, and chili flakes, cook and stir for 1 min.
- Add chicken stock and scrape any brown bits from the bottom of the pan.
- Add beans and greens, season with a pinch of salt and pepper.
- Cover pan and lower heat to medium low, and cook until greens wilt. (~5 min)
- Adjust seasoning to taste, and serve.
