Sausage Greens and Beans
- -Any kind of sasusage, green vegetables, and beans will probably work in this recipe. Probably more too. We use andouille, kale, and black beans.

- Ingredients

- 14 oz andoulle sausage (sliced and halved/quarted) -
- 2 shallots (thinly sliced) -
- 3 cloves of garlic (minced) -
- 2 tbs oil -
- 1/2 tsp oregano (dried) -
- 1/4 tsp chili flakes (dried) -
- 14 oz black beans (canned) -
- 1 bunch kale (chopped) -
- 16 oz chicken stock -
- black pepper (ground) -
- salt -

- Instructions

- Heat a pan over medium high heat, add oil until shimmering. -
- Add sausage and cook until completely browned. (~6 min) -
- Add shallot, garlic, oregano, and chili flakes, cook and stir for 1 min. -
- Add chicken stock and scrape any brown bits from the bottom of the pan. -
- Add beans and greens, season with a pinch of salt and pepper. -
- Cover pan and lower heat to medium low, and cook until greens wilt. (~5 min) -
- Adjust seasoning to taste, and serve. -
