Blushing Pasta

A simple, from scratch pasta recipe. We usually make it with a thin pasta, but I'm sure you could use any other shape.

Optionally goes well with shellfish. Sauteed shrimp, steamed clams may work well. Stir cooked seafood in just before serving.

Ingredients

  • 10 oz pasta (angel hair preferred)
  • -
  • 1/3 cup tomato paste
  • -
  • 1 pint cherry tomatoes (halved) (optional)
  • -
  • 4 large garlic cloves (minced)
  • -
  • 3 tbs olive oil
  • -
  • 1 cup heavy cream
  • -
  • salt
  • -
  • hard cheese (grated) (pecorino / parmesan preferred)

Instructions

  1. In a large pan, warm oil and garlic over medium heat.
  2. -
  3. Add a pinch of salt and 2 tbs of water.
  4. -
  5. Stir in the tomato paste with 2 more tbs of water, and cook for about 1 min.

  7. Add cherry tomatoes and cook until softened (1-2 min).
  8. -
  9. Add the cream, stirring until warm.
  10. -
  11. Add salt to taste, and keep warm until the noodles are in.
  12. -
  13. Cook the pasta, and add to the sauce. Reserve some pasta water. Take off the heat and rest for 2 min.

  15. If too thin, reduce briefly over low heat.

  17. If too thick, thin out with some pasta water.

  19. Serve, topped with grated cheese
